The Wallace Sure Fire Summer Pasta

6 medium tomatoes
10-15 chopped basil leaves
3 cloves garlic minced
1/4 lb. grated mozzarella or Monterey jack cheese
1/2 lb. pasta- spaghetti or linguini
1/3 cup olive oil

Thin slice tomatoes and layer in a large bowl. After each layer, of tomatoes is formed, sprinkle with salt, a twist of pepper, 2-3 chopped basil leaves , garlic. Keep forming layers until all tomatoes are used. Pour olive oil over top. After 10-15 minutes, use a large spoon to mix and compress tomatoes so some of the juice will flow and mix with oil. Allow to sit covered at room temperature for 2-3 hours, mix again, then refrigerate.

To serve:  Cook pasta. Drain and while still hot, toss in shredded cheese and mix well until pasta is coated. Place pasta on plate and spoon tomato/herb mixture pasta- serve with bread and a light red wine like Hinzerling Rouge. Thin sliced red or green peppers can also be added for color and flavor.
